Baked Macaroni and Cheese with Bacon

Ingredients

  • 1/2 lb. elbow macaroni
  • 3 strips bacon
  • 1 clove garlic minced
  • 1 can 12 oz. evaporated milk
  • 3 eggs
  • 1 1/2 c. shredded cheddar cheese
  • 1/2 c. shredded monterey jack cheese
  • 1/2 c.grated parmesan cheese
  • 1/2 tsp. salt
  • 1/4 tsp cayenne pepper
  • 1/8 tsp. nutmeg
  • breadcrumbs

Instructions

  1. Preheat oven to 475 degrees
  2. Heat bacon in skillet over medium heat until crispy
  3. Add garlic to skillet and mix with bacon for approx. 30 seconds. Place in medium bowl
  4. Cook elbow macaroni for 6 minutes
  5. While macaroni is cooking, whisk together eggs and evaporated milk. Mix in cheeses, salt and spices.
  6. Drain macaroni and pour into bowl with bacon and garlic. Stir to combine.
  7. Pour egg and milk mixture over pasta and stir to combine.
  8. Place mixture into 8"x8" greased baking dish
  9. Sprinlke breadcrumbs on top
  10. Bake for 12 minutes or until sides start to turn brown
