30 Minute Sausage and Bean Casserole! The perfect meal for busy nights!

Sausage and Bean Casserole

Ingredients

  • Cooking spray
  • 1 cup chopped onion
  • 2 cloves garlic minced
  • 1 16 oz. pkg. turkey sausage cut into 1/4" slices
  • 1 can 14 oz chicken broth
  • 3 cans 16 oz. each cannelini beans, rinsed and drained
  • 2 T brown sugar
  • 2 T tomato paste
  • 1/2 tsp. dried thyme
  • 1/2 tsp black pepper
  • 1 bay leaf
  • 1.5 c. bread crumbs

Instructions

  1. Preheat oven to 375
  2. Heat Dutch Oven over medium high heat
  3. Coat pan with cooking spray
  4. Add onion and turkey sausage to pan, saute for 5 minutes or until browned
  5. Add garlic and saute for 2 minutes
  6. Stir in chicken broth, scraping pan to loosen browned bits.
  7. Stir in brown sugar, tomato paste, pepper, beans and bay leaf
  8. Bring to a boil; cover and reduce heat.
  9. Simmer for 5 minutes
  10. Remove from heat
  11. Sprinkle bread crumbs evenly over bean mixture and lightly coat with cooking spray.
  12. Bake at 375 for 15 minutes
  13. Discard bay leaf before serving
