Our grill is like a member of the family.  In any given week, we grill out at least once.  It’s usually the same old same old… hamburgers, hotdogs or chicken but this past week, we decided to kick it up a notch with some pork sliders.  And not just any pork sliders…. Pineapple Sriracha Pork Sliders.

Before we had kids, we used to eat marinated pork loin ALL the time.  It was one of our favorite go-to meals.  But then kids came along and our dinners consisted of kid-style mac n’ cheese and pizza dinners for a LONG time. Now that the kids are getting older and eat adult-type foods, we’ve brought back some of the meals that we used to love. This time, we’ve turned the pork loin into pork sliders.

Smithfield® offers several varieties of marinated pork in flavors such as garlic and herb, teriyaki and peppercorn garlic all of which are available at Food Lion. When shopping for my sliders, I chose the peppercorn garlic because I wanted a little spicy to go with the sweetness of the pineapple.

If you think grilling is just for weekends, think again.  These sliders come together in just 30 minutes, making them perfect for busy weeknights.  I know that these are lazy days of summer but my kids still have practices 3 nights a week right now for a triathlon that they are running at the end of the month. After practice, we need something that is going to come together quick! This meal is real flavor, real fast which is exactly what I need right now.

PINEAPPLE SRIRACHA PORK SLIDERS

INGREDIENTS
Smithfield® Marinated Pork in Peppercorn Garlic flavor
Canned pineapple slices
Sriracha sauce
Slider buns

DIRECTIONS
1. Place Smithfield® Marinated Pork on the grill and cook for 20 minutes, turning occassionally.

2. Place the pineapple slices on the grill for the last 3-5 minutes of cooking.  Turn once halfway through cooking.

3. Once meat is done, let it rest for a few minutes. Slice the meat and place a few slices onto a slider bun.

4. Top with a pineapple slice and sriracha sauce!

Have you ever had grilled fruit?  If not, you are seriously missing out. Grilled pineapple is DELISH!  It goes perfectly with the peppercorn and garlic flavored pork. Marinated meats are such a time saver. I love that all the flavor is already all soaked in and you just have to throw it on the grill, it’s real flavor real fast…the last thing that I want to do is sit around and wait for the meat to marinate when all I want to do is get the food in my belly.

These pork sliders are so delicious even the pickiest of kids will eat them.  My son even ate them (minus the sriracha sauce). This kid hasn’t even eaten the kid-staple spaghetti until recently (and he’s almost 7) so if HE likes these sliders, you know they’re good.
