Kids, let me let you in on something. You need to leave some time after school for that thing called dinner. I can’t cart you around for hours upon hours after school.  Our family needs to eat at some point so something needs to give.  Please don’t add one more thing to my plate.  Unless of course it’s this Pork Loin with Balsamic Portobello Mushroom Sauce.

I don’t have time to spend hours in the kitchen.  If it’s not a crock pot recipe or a 30 minute meal, I usually don’t cook it.  This dish takes 30 minutes or less to make and has so much flavor, even my picky son ate it.  And if you’ve ever heard me talk about him before, you know how picky he is. He usually doesn’t like any type of sauce on his meat but he ate this…sauce and all.

Pork Loin with Balsamic Portobello Mushroom Sauce

Ingredients

  • Smithfield Marinated Portobello Mushroom Pork Loin Filet cut into 1/2" pieces
  • 12 oz. Portobello Mushrooms sliced
  • 1 shallot minced
  • 1 clove garlic minced
  • 1 tbsp fresh oregano chopped
  • 3 tbsp balsamic vinegar
  • 1 pint whipping cream
  • Salt and pepper
  • 1 tbsp olive oil
  • 1 tbsp butter

Instructions

  1. Heat oil and butter in pan on medium heat
  2. Add shallots to pan and cook, stirring occasionally. If shallots turn brown, remove from heat
  3. Season Smithfield Marinated Pork Loin Filet with salt and pepper
  4. Add Smithfield Marinated Pork Loin Filet to pan and cook 2 minutes on each side; remove from pan
  5. Add mushrooms to pan and cook approximately 5 minutes
  6. Add whipping cream, garlic and vinegar to pan, stir
  7. Add Smithfield Marinated Pork Loin Filet back to pan and cook for 10-15 minutes until pork is cooked through and sauce thickens
  8. Serve with a side of asparagus

I have to confess… I’m not a huge mushroom fan.  But I absolutely LOVE Portobello mushrooms. This recipe turned out so good that it is going to be added to our monthly rotation.
