Buckeye balls. Or what most people outside of Ohio call them… peanut butter balls. I can’t imaging a more perfect combination than chocolate and peanut butter. If you know me at all, you know that chocolate is one of my biggest weaknesses. I may or may not have eaten two entire chocolate bars in one sitting while pregnant. My husband brings me multiple choices because he’s just awesome like that.
My son has recently announced that he doesn’t like peanut butter anymore and would not touch these delicious peanut butter balls. Seriously kid? I think maybe he got sick of PB&J sandwiches because lately he has been making himself plain jelly sandwiches for lunch. Whatever kid. As long as you eat your lunch.
But for all of you who can’t get enough of the peanut butter and chocolate combo, here is an easy recipe for peanut butter balls.
5 Ingredient Peanut Butter Balls
- 12 oz. peanut butter
- 1 stick butter
- 1 tsp. vanilla
- 1 lb. powdered sugar
- 16 oz. semi-sweet chocolate chipa
Soften (don't melt) the butter in the microwave. To do this, microwave it for approx. 10-15 seconds
Beat peanut butter and butter together in a mixer
Stir in vanilla
Add in powdered sugar and beat till combined
Roll into 1 inch balls and place on waxed paper lined cookie sheet
Place in freezer for 1 hour
Melt chocolate according to directions on the back of the package
Place a toothpick into each peanut butter ball, dip into chocolate and place onto waxed paper to harden.
When I say “easy”, I truly mean easy. But I need to tell you about a little snag I’ve been having so you don’t make the same mistake. So I’ve been making things dipped in chocolate for quite some time now and I have always had difficulty getting the chocolate to be the right consistency. I couldn’t for the life of me figure out why mine never turned out as “liquidy” as the photos in the cookbooks. After going through an entire 2 bags of chocolate chips and having them solidify, I (my husband) finally figured out what I have been doing wrong all this time. 4 words: USE THE CORRECT BOWL. It’s the bowl that makes all the difference and not all microwavable safe bowls are created alike.
I’ve been using ceramic bowls and apparently they get too hot and they heat up the chocolate too much, the end result being a solid chunk of chocolate or if you are luck, chocolate that isn’t solid but isn’t really great for dipping. I wish I had a picture of my fail for you but too many words that I won’t repeat were coming out of my mouth for me to remember to grab the camera.
So what type of bowl should you use to melt the chocolate? We used a cheap tupperware-type container and it worked perfectly. So my advice if you are having trouble getting the right consistency for your chocolate is to melt a small amount of chocolate at a time and test out different bowls to see which one works best.
So that was a really long tangent but the consistency of the chocolate is key to this recipe and I want to save you the trouble that I have gone through in the past.
I hope you enjoy these peanut butter balls as much as my family (minus my son) did. They were eaten up in 2 days!
