Today I have an incredibly easy and tasty recipe to share with you. Bruschetta Chicken. Even the pickiest of eaters will gobble this up. My son nearly cleared his plate the other night at dinner and for a kid whose first reaction is usually “yuck”, this is quite the victory. My husband requests this recipe constantly and it is a regular in our dinner rotation.
A 30 minute meal is always the goal in our house. If it takes any longer than that, it just isn’t going to happen. This dish will be on your table in no time flat. Bruscetta Chicken is great as leftovers too and the pan feeds a family of four with plenty for a lunch the next day.
Bruschetta Chicken
Ingredients
- 1 1/2 lbs. boneless skinless chicken breast cut into bite size pieces
- 1 box 6 oz. Stove Top Stuffing (chicken flavor)
- 1/2 cup water
- 1 can 14.5 oz. diced tomatoes
- 2 cloves garlic minced
- 1 cup shredded mozzarella cheese
- 1 teaspoon dried basil
Instructions

Preheat oven to 400

Combine stuffing mix, water, diced tomatoes and garlic in a bowl. Stir until stuffing is moistened.

Place chicken in a greased 9x13 baking dish

Top chicken with basil and cheese

Place stuffing mixture on top of chicken.

Bake for 30 minutes or until chicken is cooked through
Delicious and easy. You just can’t beat that!
