Mint Chocolate Chip Pudding Cookies

Today I’m kicking the series off with some delicious Mint Chocolate Chip Pudding Cookies.
Pudding cookies are the best. THE BEST. Especially right after they come out of the oven and you are the only one home and you get to taste test them all by yourself. It was glorious and gooey and minty and oh so good.


Mint Chocolate Chip Pudding Cookies
Ingredients
- 3/4 cup butter softened
- 2 eggs
- 1 tsp. vanilla extract
- 1 tsp. baking soda
- 2 1/4 cups flour
- 1 small package 3.9 oz chocolate pudding mix
- 1 cup sugar
- 1 cup chocolate chips
- 5-10 drops peppermint essential oil
Instructions

Cream together butter and sugar

Beat in dry instant pudding mix

Add eggs and vanilla and mix well

Add peppermint essential oil

Add baking soda and flour and mix well

Stir in chocolate chips

Roll into 1" balls and place on a baking sheet lined with a Silpat (or a greased baking sheet)

Bake for 8-10 minutes at 350 degrees.
Mint and chocolate is one of my favorite flavor combos. It comes in a close second to peanut butter and chocolate. This recipe oozes chocolate because of the chocolate pudding AND chocolate chips.
Imagine bringing these into the office for your co-workers. I’m pretty sure you’d be getting a raise if you hand delivered them to your boss. They are THAT good.

How much flour?? 1 1/2 or 2 cups?
