Strawberry Pineapple Popsicles

Strawberries are a staple in our house. I buy the 4 lb. container and they are gone within a few days. I’m lucky if I get my hands on any because my children shovel them into their mouths by the handful. Not that I’m complaining. I should never complain that they are eating fresh fruit but I would really like to get some for me before the vultures get to them all. Yesterday must have been my lucky day because I was able to snag the last of them to make  Strawberry Pineapple Popsicles.

 

Strawberry Pineapple Popsicles

If you have never made your own popsicles, you are missing out. It’s easy and their are so many different flavor combinations that you can make.  I’ve made several in the past year. My favorites are  my Peaches and Cream Popsicles and Root Beer Float PopsiclesHere is what you need to make strawberry pineapple:

2-3 cups sliced strawberries
2-3 cups cut up pineapple
Simple syrup (1 cup water, 1 cup sugar.  Combine and heat until sugar is dissolved. Cool to room temp.)

Told you it was easy!

Purée strawberries in a food processor or blender. Place purée into another container.

Rinse out food processor/blender and purée the pineapple.

Taste each purée and make adjustments using a few tablespoons of the simple syrup.

Pour the strawberry purée into the molds first. Fill them up halfway. Then pour the pineapple in slowly.

Place your sticks in and freeze 3-4 hours. To remove popsicles from mold, dip the mold into hot water for 30 seconds and then gently pull the popsicle out.

It’s a scorcher out today and I can’t wait to eat these with my kids this afternoon!
