Today I have my friend Meredith here sharing a super easy cookie recipe.

Hi Here Comes the Sun readers! I’m Meredith. I’m a wife, a mama, a milk pourer, diaper changer, and hot dog cutter. This is my family...

I’m also a blogger. My neck of the woods is Wait Til Your Father Gets Home. When I chose that name for my blog, my hubs was a member of the normal 9-5 crowd. Now we are fortunate enough to have him working from home, ironic, huh?!

I’m so excited to be here today to share one of my most favorite Christmas cookie recipes for Chocolate Crinkle Cookies. They are SUPER duper easy to make, but look like they take a lot of effort {if you ask me}.
Chocolate Crinkle Cookies
To make about 2 dozen, you’ll need:
1 box of Devil’s Food cake mix
1/4 cup vegetable oil
2 eggs
1/2 cup powdered sugar

1
To make the dough, combine the dry cake mix with the vegetable oil and eggs. It’s going to be very thick, almost like a silly putty consistency. Once the dough is mixed well {I broke out my Kitchen Aid to tackle that task}, roll out 1 inch dough balls.
3
Once you’ve got an entire pan ready to go, roll each dough ball in powdered sugar, coating it as much as possible.
4
Before baking, flatten slightly with the bottom of a cup. You do not need to flatten them much, just lightly press to get them going in the right direction!

Bake for 8-9 minutes at 375. {As always, oven temps and times may vary, so keep an eye on your first batch}.

Cool on wire racks and then get ready to watch them disappear! They are DELISH!
