Muffin Tin Meatloaf
These bite sized potions of muffin tin meatloaf will be gobbled up at dinnertime!
My daughter LOVES meatloaf. When I mention that we’re having meatloaf for dinner, her eyes get all wide and it’s like I’ve promised her unlimited candy for the rest of her life. I love making this dish it because it’s easy, healthy and my whole family likes it.

You know what’s even better than meatloaf? WAIT, there’s something better? Why yes, yes there is. And it’s Muffin Tin Meatloaf. Because everything is better in a muffin tin.
MUFFIN TIN MEATLOAF


Muffin Tin Meatloaf
Ingredients
- 1 lb. ground beef
- 1 egg
- 1/2 cup milk
- 3/4 cup bread crumbs
- 1/2 teaspoon black pepper
- 1/2 onion diced
- 4 tablespoons Worchestire sauce
Instructions

Preheat oven to 350

Spray 10 muffin tins with cooking spray

Mix all ingredients in a bowl and divide mixture evenly into muffin tins, packing down gently

Bake for 20-25 minutes

Remove frm muffin tin and top with mashed potatoes

Here’s a tip to make your meal prep go faster: dice the onion by cutting it into quarters and then placing 2 of the quarters into a food processor. Grind it up and you’ll have perfectly sized onion pieces!
The reason I love muffin tin meatloaf so much is because I just love things that are in single serve portions. It makes dinner so much easier and if there are any leftovers, you just pop them out of the muffin tin, into a plastic container and into the fridge. Top the meatloaf with a spoonful of mashed potatoes and you have yourself a delicious and perfectly portioned dinner.
