It’s summer.  It’s hot and nobody wants to spend time in the kitchen cooking, am I right?  Heck, it’s even too hot outside for us to grill. 100+ temps plus a hot grill is no good. I’m a big fan of crock pot meals but a lot of crock pot recipes tend to be for hearty winter food. Not these recipes!  I’ve pulled together 10 Summer Crock Pot Recipes to get you through the summer.

These recipes are perfect for busy back-to-school nights too so don’t think that they are JUST for summer. If you’re reading this post, I assume that you have a crock pot.  But if not, this is the one that I use. It’s affordable and we have had it for years and it still works great.  If you have a large family, you may want to get a bigger one but this works well for our family of four.   I love it and it has served us well for many years. If you want easy clean-up. (and you DO want easy clean-up, right) try these liners!  They are a life-saver! Now on to the delicious recipes.

Did you know that crock pot cooking goes hand in hand with freezer meals? Planning your weekly (or monthly) menu with freezer meals is even more of a time saver than just using your crock pot to cook.  The concept is simple… take a few hours on one day (preferably a weekend or a day that you don’t work) to prep a big batch of meals. Then, place all the prepped meals into the freezer so all you have to do is grab them and dump them into the crock pot for dinner.

I personally like to do the type of freezer meal planning that doesn’t require me to cook anything on prep day.  I just line up my freezer bags on the counter (you can use these bag holders to make the job easier), place my chopped veggies, meat and sauces into the bags and place into the freezer.  It takes me about 2 hours to make 2-3 weeks worth of meals.
