Chocolate Chip Cookie Ice Cream Sandwiches

Last month, my kids went to a birthday party and instead of the typical cake/cupcakes and ice cream, they served ice cream sandwiches from Coldstone Creamery.  Have you ever had these? They are so yummy…lots of ice cream sandwiched between 2 huge chocolate chip cookies. Fast forward a month and it was time to get my daughter a treat for her summer reading.  One of the local stores was offering free cookie dough for reading 10 books. We picked up the cookie dough and I got the great idea to make some Chocolate Chip Cookie Ice Cream Sandwiches! Just like Coldstone but a lot more budget friendly!

Delicious Chocolate Chip Cookie Ice Cream Sandwiches

I used the pre-made cookie dough and baked the cookies according to the recipe on the package. I made the cookies a bit larger than usual because I wanted really big ice cream sandwiches! I baked 10 cookies…enough for each person in the family to have one, and one left over for a midnight snack for me 🙂

After the cookies were cooled, I put a big scoop of vanilla ice cream on one cookie and smoothed the ice cream out with the bottom of a spoon. I placed another cookie on top of the ice cream, squishing the ice cream in between the cookies. I ran the back of a spoon around the edge of the cookie to smooth out the ice cream again. I then shook some multicolored sprinkles on the ice cream. 

The only thing homemade about this was that I put it together myself. Everything was store bought.  You could go the extra mile and make your own ice cream and cookie dough but I was just not that ambitious.  Although sometime soon I really want to try to make my own ice cream.

These ice cream sandwiches taste amazing! Save room for these puppies because you need a semi-empty stomach to finish one! Have fun mixing and matching cookie flavors and ice cream flavors!
