Root Beer Float Popsicles

Summer is in full swing and the hot weather is here to stay for a while. Trying to stay cool is at the top of our list and there’s no better way to stay cool then having a cold tasty treat. And when you make it yourself, it’s much more fun. Last month I made Frozen Yogurt Bomb Pops and this past weekend I made Root Beer Float Popsicles.

Here Comes the Sun: Root Beer Float Popsicles

These are super easy and super yummy and you don’t even need a special popsicle mold. All you need are small Dixie cups and popsicle sticks. 

Here’s how I made them…

Fill a pitcher with chilled Root Beer and place in freezer for 10 minutes. Pour a small amount of Root Beer into your molds. Drop a small scoop of vanilla ice cream into each cup and then pour a bit more Root Beer in. Place a second scoop of ice cream on top. This allows the layers to mix and give that true Root Beer float flavor.

Cover your cups with plastic wrap and cut a small slit in the top of each one. Insert a popsicle stick into each slit and freeze overnight. The plastic wrap ensures that your popsicle stick will stand up straight while freezing.

Then enjoy a frozen root beer float!

    Those look delicious. I loved root beer floats as a child. This is a great way to share an old favorite my children.
