Summer is winding down but there is still time to enjoy all the flavors of summer like these Strawberry Vanilla Yogurt Popsicles.
I have made tons of popsicles this summer. So much so that my husband has suggested that I open a food truck specializing in popsicles and take it to the beach towns to sell to all the tourists. Maybe someday but for now, this is an in-house operation. Store bought popsicles can get pricey plus they can come with lots of added sugar and artificial colors. The kids are always begging for new flavors so my newest flavor combo is Strawberry Vanilla Yogurt Popsicles.

Strawberry Vanilla Yogurt Popsicles
Ingredients
- 16 oz. strawberries
- 32 oz. vanilla yogurt
Instructions

Cut off the tops of the strawberries and slice each one in half.

Puree the strawberries in a food processor or blender

Fill popsicle molds 1/3 full with vanilla yogurt

Layer strawberry puree on top of yogurt until mold is approx 2/3 full

Top off with another layer of yogurt

Place popsicle sticks into the molds and freeze

To remove popsicles from molds, run the molds under warm water and then gently slide the popsicles out.
There are many different popsicle molds available these days. This is the popsicle mold that I used for this recipe. Other popular molds are the Norpro and Zoku. (affiliate links)
These are so delicious on a hot summer day.
Another way you can make these is to slice the strawberries and place them in the molds (without pureeing them). Then pour the yogurt into the molds and let it settle to the bottom of the mold before freezing. Here is one that I made that way. Same taste… different look.
